I attached a screenshot of the page builder widgets (so you can recreate the about us page).
If you want to hide the sidebar on a page scroll to the bottom of the page, you will see a metabox 'Sidebar Settings'. Click on the Hide radio button and save the page.
ACF is a necessary plugin which need to be activated to run the theme properly. A lot of page options and the slider is made with functions from this plugin.
You don't have to buy it, it is coming with the theme for free. Please navigate to Appearance > Install Plugins and install & activate the plugin.

without the sidebar (as per your example).
I'm sure it's something simple.

Was this functionality part of the ACF pro plugin which I didn't install because I'm cheap and couldn't afford it in $US? :)

...and now I've activated these plugins, something weird has happened at the 'header' above the image ... know of a quick fix?

Looks like the slider images doesn't load. But I can't tell you what is exactly the issue from a screenshot.
