You can use the theme build-in slider by changing the page template to "Front Page Jumbotron" in the "Page Attributes" metabox on the right side of the screen while editing a page.
Below the page builder grid a new metabox "Page slider" become visible where you can add your image slides with text (screenshot).
The overlapping effect is part of the design and you can fix this by setting this page as homepage under Settings -> Reading. Set "Homepage" select field to this current page.
If you don't want the overlapping at all you can disable this via Appearance -> Customize -> Theme Options -> Header -> Widgets overlay

Is there a full width slider with text and buttons in place that I can use and overwrite please? None of the pre-built layouts have one in place.

To add a button below the slide texts you can add the same button shortcode you're used before in the theme to the textarea:
[button href="yourdomain.com/page-link"] Button Text [/button]

If you go to the page, you'll see that the top of the slider is overlapping the info bar. How should I correct this please?
