I see all the plugin are not installed and activated yet. Please do this via Appearance > Install Plugins. After installing and activating all the plugin the Portfolio tab will be visible again in the menu.
The tab is named 'Galleries', its located on the 3th position in the admin menu. Here you can create a single gallery (portfolio) post where you can add your gallery images and a featured thumbnail image, which will be displayed in the essential grid.
